Moroccan Gum Arabic is produced in the northwest of Morocco near the Atlantic Coast. Gum Arabic, or Mastic (gum acacia) as it is also known, is a natural gum. It is resin taken from two species of acacia trees. It has a slightly piney aroma and it tastes of cedar when chewed to purify the breath. It is used as a flavoring and a thickener and is found in recipes for breads and pastries, ice creams, sweet puddings and cakes.
