This fresh product comes from Acipenser baerii (Siberian sturgeon) raised on an aquafarm in the Rio Negro area just 275 km from Montevideo, Uruguay. The farm was created in 1995 with the help of Russian biologists and farmers. Characterized by medium-sized grains ranging in color from grey to golden brown, this caviar is appreciated for its delicate nutty flavor which lingers on the palate.

American Farmed White Sturgeon Osetra Caviar

Osetra Caviar of Acipenser transmontanus (White sturgeon), produced in a controlled environment of the American aquaculture farms in San Francisco and Sacramento Valley of California, recently gained popularity with gourmands all over the United States and found its way to the tables of the best restaurants in the country. It comes from native American white sturgeon and has a slightly firm, but delicate texture, with fine distinguishable eggs. Thanks to the first conservation efforts in Israel, the White Sturgeon (Acipenser Transmontanus) flourishes in natural ponds supplied by pure spring water from Hermon mountain. These cultivated white sturgeon produce large grain roe like the finest Caspian Osetra caviar, with rich, nutty, creamy flavor.
