Bucherondin is a living bloomy cheese. It is not wrapped and can thus ripen slowly, gaining in character when kept in the fridge at 4°-6° C.
After three weeks it becomes dry and crumbly and is excellent served with aperitifs. Serve it at the end of a meal with white wines when the cheese is young or with a red wine when it has matured. The characteristic goat taste increases steadily when the cheese is kept at 4°-6°C.

The cheese’s form, a four-sided, truncated pyramid from Berrichon goat’s milk. History tells us that the original shape was a perfect pyramid. The Valencay is made by allowing the curd to drain in a mold, it is then removed and covered with salted charcoal ash and allowed to ripen for about 4 to 5 weeks in a well ventilated cellar at 80% humidity. During this period its rind will thicken slightly and acquire blue marks.

Chabichou du Poitou - soft goat's milk aged AOC cheese - 5.3 oz/150 gr, France.
The Poitou-Charentes region is the cradle of the goat cheese producers. The victory of Charles Martel over the Sarrasins at Poitiers in 732 created a rebirth of goat cheeses (chebli in Arabic, from which comes Chabichou) which has made Poitou famous. Chabichou was awarded the AOC in 1990.
