This exquisite and attractive cheese offers a gentle, subtle flavor and a satiny texture that melts in the mouth. Its natural, edible thin rind has a beautiful orange hue beneath a fluffy white coating. Le Brin is perfect to serve at any time of day. It makes a quick snack, slips easily into a gourmet sandwich and can also be used in salads. Le Brin goes well with dried apricots, apple slices sprinkled with cinnamon, pistachios and peanuts.
