A perfect accompaniment to roasted turkeys.
It is an ideal garnish for games, and it sweetens acid sauces and marinades. Purists like it seasoned only with salt and pepper, but the flavor can be brought out by adding cream, and you can give it that that individual touch adding cognac, madeira, lightly fried onions or shallots.
