In the 19th century is was considered the finest cheese in Europe. The geographical separation between the places of production and "affinage" is a Brie tradition. Texture: The pate is compact, supple and evenly textured. Its color is pale yellow, reminiscent of straw. Its rind looks like white velvet.

Brie de Nangis - cow's milk brie cheese, white mold rind - 2.2-2.5 lb/1-1.1 kg, France.
Brie de Nangis was originally an artisan cheese made in the town of the same name. Though no longer produced there, it remains true to the original style. It is much smaller than its bigger sibling, Fromage de Meaux, but shares many of the same texture and flavor characteristics.
When young it is milky and sweet with just a hint of earthiness that over time will become more pronounced and pungent.

Coulommiers - cow's milk brie cheese - 14 oz/400 gr, France.
This cheese is Brie's little brother; some say that it is the grandfather. It is smaller and thicker than Brie but otherwise possesses all the characteristics of a Brie.
Texture: One should choose a Coulommiers which is soft to the touch with a white heart set in a pate of pale yellow. Its white velvet rind has a slight reddish pigmentation. The pate is very supple and soft.
Taste: Its taste is sweet and melting, with an almond flavor.

From the family of Brie cheeses, this one is most closely related to a Coulommiers, although slightly larger and aged with a fern leaf. Its origins are artisan based having been made directly on farms for single-family consumption. The fern was used both for decoration and to impart a woodsy, earthy scent to the cheese.
